Healthy Pancakes x 2 (gluten free, dairy free, sugar free, fat free)

Good morning!

This morning I felt pretty rough, thanks to the travels coming back from the tour and playing a late gig last night. So I felt like treating myself and ended up making 2 different kind of pancakes. I found a few recipes online and adapted them a little bit according to my own taste. Both pancakes turned out really good and tasty. There isn’t a better start to a day than yummy food 🙂

Servings 1 
103 kcal/serving
Cooking time: 10 minutes

INGREDIENTS

  • 25 gr Oats (grind into flour in blender)
  • Pinch of salt
  • 1 tsp Xylitol (or stevia)
  • 0,50 mll Cold water
  • 1 tbsp Apple sauce (sugar free)
  • Pinch of vanilla (powder or extract)

how to MAKE IT

  1. Mix dry ingredients together
  2. Pour in wet ingredients. The dough is quite runny, similar to ”normal” pancake batter. 
  3. Fry pancakes in a pan on medium heat
  4. Pancakes will be soft and fluffy and will taste especially good with fresh berries!

————————————————————AMERICAN PANCAKES

Servings 5 
33 kcal/serving
Cooking time: 10 minutes

INGREDIENTS

  • 25 gr Oats (grind into flour in blender)
  • 1/4 tsp Baking powder
  • 75 gr Alpro soy vanilla yoghurt
  • tbsp Apple sauce (sugar free)
  • 1 Egg white

HOW TO MAKE IT

  1. Mix dry ingredients together
  2. Pour in wet ingredients and mix well. Batter will be thick and fluffy.  
  3. Place dollops of batter into a pan. Use 1,5 – 2 tbsp per pancake. Fry on medium heat. 
  4. Enjoy with berries and pure maple syrup!
