For these cupcakes I applied a recipe from one of my favorite healthy dessert blogs, Chocolate Covered Katie. I have made small changes into it according to my own preferences, and I have to say, these cupcakes are insanely good! I highly recommend making them if you like that scrumptious, succulent and rich taste of cupcakes.
I made 2 flavors, chocolate hazelnut caramel and lemon with vanilla & white chocolate filling. Hmmm I’m drooling just thinking of those flavors! 😉
I made a double portion of the basic dough so that I just left out cocoa powder, lemon extract amd lemon peel. After that I divided the batter in two and added those ingredients to each. Both cupcakes turned out really delicious and they work perfectly as an healthy afternoon treat with a cup of coffee. As a bonus they are gluten free and dairy free.
