Fusion noodles
Today after two long days of work I got a little strange sounding fusion noodles for dinner – and am just too tired to write the recipe both in Finnish & in English right now so here comes the English version first.
So, after suggesting to cook some veggie burgers for dinner after work I came home and found out we´d be having noodles today. Me & noodles go so well together, I don´t think I ever have had a moment when noodles were not a good idea (rice noodles of course, after having to give up wheat). On the table there were some of my other favorite ingredients as well – (noodles & noodles,) lime, garlic, fresh chili, pesto and feta cheese. And yes, they did go together so well too!
Hot fusion noodles (for two)
soy & marinade
handfull of soy cutlets (or bits, the dried ones or tofu)
1/2 dl gluten free soy sauce
1-2 fresh chilis
2-3 cloves of garlic
juice from 1 lime
1 small onion
1/2 dl tomato purée
small piece of fresh ginger
1-2 ts vegetarian consommé powder (depending on how salty the soy sauce is – and in Finnish this would be kasvisliemijauhe)
black pepper grounded
1 ts runny honey (or dark syrup)
fresh herbs (which ever you have, I had some basil, oregano & mint)
a little bit of olive oil
the noodles & other stuff
100 g rice noodles
1-2 red chilis
1/2 red paprika
1 onion
2-3 cloves of garlic
juice of 1-2 limes
1 tbs pesto
100 g feta cheese
1 tbs sesame oil
some soy sauce
black pepper & salt grounded (to your own taste)
vegetable oil for cooking
Recipe: boil some water in a quite large kettle, add the soy cutlets and add all the other chopped & grounded ingredients (the 1st part of the list of ingredients) to go with the soy. Boil some 10 minutes, take off the heat and let simmer for a while. Trickle well and keep a side for a while.
Measure the noodled into a bowl, add boiling water on top until the noodles are fully covered. Let them cook for some minutes. Trickle well.
Chop the onion and garlic with fresh chilis and paprika, heat some oil in a large pan and add the vegetables. Cook for a few minutes, add the sesame oil and the marinated soy cutlets – roast for a while. Take the trickled noodles and add on a pan, add lime and season a little (with black pepper & salt) – and add the pesto and feta cheese. Mix well, let heat a little and the fusion dinner is ready!
Add the strange mix on a nice place with some fresh herbs and lime chunk on top – (don´t be suspicious and) enjoy!
